Quick, I am STARVING!
This was one of those days that I was so thankful that I had those delicious homemade Chicago Diner Burgers in my freezer! The illustrator and I had been running around all day and by the time we saw what time it was...it was 3:00pm and we were starving! I had to get the kids from school and then deal with food! Thank God for freezing leftovers...right? I made a large batch of the burgers a few weeks ago and they freeze so well. I made a few changes to this batch and they were better (in my opinion) than before. I will just repost it here with my changes!

Chicago Diner Burgers
(adapted from recipezaar.com)

1 cup diced roasted red peppers
1 cup diced onion
1/4 cup tamari
2 tsp onion powder
2 tsp garlic powder
1/2 tsp ground black pepper
pinch of salt
3 cups quick oats
4 cups diced portobello mushrooms
1/2 cup whole wheat flour

Bring 4 cups water, roasted red peppers, onion, soy sauce, onion powder, garlic powder, and pepper to a boil in a pot over medium heat. Reduce heat to medium and simmer 5 minutes. Stir in oats, mushrooms and flour and cook 5 minutes more. Transfer to a bowl and chill.

Preheat oven to 350°F; coat baking sheet with cooking spray. Shape mixture into patties and bake on prepared baking sheet for 15 minutes. Flip and bake 10 more minutes. Cool.

Heat grill to medium-high. place foil on grill and coat with cooking spray. Grill burgers on foil for 7 minutes per side. Serve.

    These look great! I love tomatoes, red peppers and mushrooms and this looks like an awesome combination of the three.
    Very nice picture also.

    Mmm these sound great. I need to make some homemade veggie burgers again! They're a great thing to have in the freezer for a quick meal.

    eat me delicious - I love these. You can play around with the flavors too, which I really like!

    veggie girl - I have only been to Chicago once and that was a really long time ago. I would like to go some time, though.

    scott - These were my first attempt at any kind of veggie burger and I do really like them.

    Alisa - I know what you mean. That is one of the things my husband had a problem with...the texture. I guess it was kind of what I expected from the mushroom and oats. I have never tried one with seitan or tvp before, but would like to. I hope that you liked them ok anyway! By the way, great picture on flicker.
