Partners and Rosemary Garlic Potatoes!

Hello Wednesday! I had a partner workout with me today! I was so excited. I got up early, did a 15 minute warmup, 30 minutes of muscle toning (worked on my booty...I will have a Brazillian butt one day..haha) and then the illustrator and I went on a walk! I was so excited to have a partner to workout with today! I never get that and it was so great to get to chat and get some great cardio in to start the day! Do you normally have a workout partner or do you go at it alone? This was a great day to start Wednesday!

I can't believe it is already Wednesday. Tuesday went by in a flash! I can't say I got a ton of stuff accomplished, but I did organize my thoughts and I have a plan of action which is half the battle, right? I picked the kids up last night and met up with friends for dinner. We met at Jason's Deli for dinner and can I just say that I love Jason's Deli? They have such a great assortment of food to suit so many food intolerances and allergies. I had the salad bar (I know, shocker), where I ate my weight times 2 in vegetables and fruits! I loved it...the kids snuck vegetables out of my bowl!  I have such good boys!
Anyway, when I went back for some apple slices, I noticed these crackers on the bar.  I know I don't go often to Jason's, but this is the first time I had seen these. I was bummed that I had not seen them before so I could break them up on my salad, but I was so happy to see a dairy free/soy free cracker option. I ate them with my apple slices and thought they were so good! Super crispy and really tasty with all the seeds! I am really happy to see places that have options for all of us that have to eat with restrictions!
The unfortunate side to going out to eat is that the illustrator could not go since he had to work last night. I know...he is a machine! So, I made dinner for him before I left  I could not stand the idea of going out and leaving him to eat whatever. So, I made him a good dinner to fuel him through work!
The star of the meal was the potatoes! We do a lot of potatoes around here, so I wanted to do something a little different. I looked around and since we had some baby yukon gold potatoes (so sweet)...
and fresh rosemary...
and Nutiva Hemp Oil I had a plan!

These came together in about 15 minutes and the illustrator LOVED them! Sometimes the simplest things to make are forgotten! This was my first time using Hemp Oil and I really liked it. It was light with a mild flavor that worked really well with the garlic and rosemary. Not to mention, it is loaded with Omega-3's! I am happy to add some polyunsaturated fats to our diets! This stuff is good for your heart, your joints, your skin, your brain function...the list goes on and on! I am not one to go crazy with oil, but adding healthy oils to our diet is extremely important to me!

Rosemary Garlic Potatoes

6 baby yukon gold potatoes
6 cloves of garlic (peeled)
2 tsp fresh chopped rosemary
2 tsp Nutiva Hemp Oil
1/4 tsp Kosher salt
fresh ground black pepper

Boil the potatoes and garlic in water until potatoes are done (about 10-15 minutes). Drain the potatoes and garlic (don't let the garlic get away). In a nonstick skillet, heat the Nutiva Hemp Oil on medium high. Next add the potatoes, garlic, rosemary, salt and pepper.  Allow to cook swirling the potatoes around to get browned all around.

***Edit***Apparently you should not cook with hemp oil in order to get the benefits of Omega 3 & 6.  So, use coconut oil instead.  Although, the illustrator informed me that he thought they were still pretty darn tasty regardless!

  1. I have a serious love affair with Jason's Deli. My favorite is the Chicken Santa Fe- but I try to do the half sandwich/half salad as a healthier option. Because you're right- their salad bar is just amazing.

  2. I love Jason's Deli! I haven't been to one in years, but in college, I went ALL the time. Mainly for the free ice cream. :-)

  3. You are too good for making dinner before you went out to eat! Love rosemary and potatoes. Such a great combo of flavors. I can't even remember the last time I went to Jason's Deli. We have one...I just never think of it. May need to remember to put that on the agenda. My hubby will run with me, but other than that, I always work out solo. So glad you had a great start to the day!

  4. I love Jason's Deli too! My favorite thing to order is the turkey reuben and vegetable soup. Actually I think that's the only thing I've ever ordered... I need to branch out!! ;)

    I love rosemary garlic potatoes!! My mom used to make them all the time when I lived at home. And she would always tell us how good they were for us. I think that's why I love healthy oils like olive oil so much. She made sure we weren't afraid of them.

  6. I've been thinking of trying hemp oil, it's just a bit pricey. I use olive oil in cooking all the time. it's that little extra ingredient no one mentions but you'd miss if it weren't there.

  7. That's so nice of you to make your hubby dinner! Rosemary is one of my favorite herbs. It's gotta be fresh though!

    I've seen hemp oil a few times but the price tag has kept me away lol. Maybe a nice company will send me some for free (*cough*cough*). But I agree- it's important to get those oils in your diet!

  9. Mmmm I am looking for a good hemp oil! My nutritionist yesterday suggested that I should incorporate that into my diet more :)

    I do love coconut oil like nobody's business!

  11. i think that at whatever heat you cook the food, you are not removing ALL benefit of the omegas, it's just optimal vs average type of thing. I wouldnt worry, you still got your bennies in, girl!

  13. I used to eat at Jason's Deli all the time in college but I haven't had it years because the only one is 45 minutes from my house and while I love Jason's Deli it ian't exactly worth a 45 minute drive! haha!
