This was a whirl wind weekend! We had such a great time which means it went by quickly! That actually makes me kind of sad since the boys only have one more week until the boys are back in school. We went from possibly having house guests, to not having house guests, to going shopping for school supplies, to having friends stop by to hang out for an evening of dominos since they were having dinner close by, to having family come over for a biscuit brunch! Yeah, I think that about covers it. Oh and the illustrator did some work while I successfully avoided the laundry. I am getting good at this avoiding the laundry thing! Note to self, get better at folding laundry. Ok, back to the biscuits...
I have mentioned before that I have a cousin who has been having problems with certain food groups and after going through an elimination diet, she has found that gluten is a problem for her. So, since it has been a while since she has had a biscuit and you know every southerner needs a good biscuit every once in a while we decided this was as good a time as any...biscuit time! I have used Bob's Red Mill Gluten Free Biscuit and Baking Mix before and we really liked it. So, that is what we had today. I lower the fat in my biscuits with no problem and I do a cheater way of getting the pull apart layer so I don't have to roll them out and make a bigger mess. I always make my biscuits with Smart Balance Light. I make sure that everything is really cold when I start. Then I cut the "butter" in with a fork. Next, I put the flour/"butter" mixture in the fridge to sit for a little while. Then I gently stir half water and half almond milk into the flour until in comes together. Since I used lower fat butter substitute, I added the liquid a little bit at a time because there is more water content in the butter sub. The package says to use milk or water and I used a mixture so they would be rich but not too heavy since they are gluten free. Even Jay, who is not a fan of biscuits, loves them. He said he liked them because they weren't all crumbly. If you can't do gluten, I highly recommend this mix! Oh, and to get the layers, I use an ice cream scoop. I just stack two scoops on top of each other and then press it down.
Since it was brunch, we ate around 11:30. The menu was brown sugar glazed ham, home fries, scrambled eggs, biscuits, watermelon, cantaloupe and grapes! Did you notice, there is no oatmeal on my plate?! The illustrator was extremely impressed. I think he actually got excited that I ate everything everyone else ate excluding the ham. I know that seems silly to most, but I got to a point where I avoided everything because it wasn't made for my dietary restrictions. Now that I have other people with me that can't have certain foods, none of us have to live without! It actually feels comforting to eat what everyone eats and I don't feel like the odd man out...not for that anyway. The illustrator made the home fries and they were so good! We baked the potatoes before hand and let them cool, then he diced them up and fried them with onion, onion powder, garlic powder, Kosher salt, cracked black pepper and Smart Balance Light.
This weekend was a lot of fun! Now, we are going to get some rest tonight since this will be one heck of a busy week!
Who is ready for this week? I am ready for a great August! I will miss my boys during the day, but I know this will be a good month!
trust me, i think its totally understandable to avoid everything unless ur 100% certain it fits ur allergies and needs. I don't think its a good risk to take either.. and it the vibe of the place is uncertain too (like if u ask them if something is gluten-free and they are like ..hmm .. ummm... yea.. ummm.. NO) it doesnt make me feel any more reassured.

We had gluten free biscuits today too!! Andrew made them using GF Bisquick. But ours weren't nearly as healthy as yours... for starters he used *cough* Crisco *cough* and to top it off he made a GF sausage gravy from scratch to go on top of them. SOOOOO unhealthy, but I have to say sooooooo delicious, haha! ;) We will have to try out your way next time - our arteries will thank you!!
ReplyDeleteI made chocolate chip scones and pumpkin scones this morning (most definitely not GF), but afterward thought I should do biscuits soon. I haven't had biscuits since going vegan. And those home fries look awesome - I love me some potatoes!

ReplyDeleteThe biscuits look great, and sound like ones I would enjoy, too! I hate crumbly biscuits. I never really "got" why someone would want to eat something dry and crumbly, I guess, haha. Maybe I've just never had a really good biscuit before to know?

Your biscuits sounds great! How kind of you to make gluten free ones for your cousin. You're right that everyone needs a biscuit occasionaly, despite dietary restrictions!
