Feeling Lucky |
I want to start with thanking everyone for saying such nice things about Max's day! It was definitely a memory maker day!
On another note...my poor husband has worked 26 days straight and he still has 15 days to go. He is really my hero. I feel so lucky to have him! I will stop gushing about the illustrator, cause I really could go on for hours about how good he is and how much I appreciate everything he does for us. Thanks babe for all you do!
Luckily we were able to get out of the house for about 3 hours yesterday to have lunch with some of our friends. The boys "needed" wings so we went to a wings place. I brought contraband (hummus & some veggies) so I could eat with them. I stole some of their celery along with my friend's celery for my dipping pleasure. Honestly, calling what I took hummus is kind of a stretch...I took some chickpeas and mashed them up with salt, pepper and hot sauce. It was really good and super quick. The company was great, but we unfortunately had to come home so the man could work more. This is not an always thing, he just has a super tight deadline going right now.
The weather is getting cooler now, so we actually took our walk around 11:30am. It worked out well because even though we did not sleep so well last night, we laid in bed a little longer and missed our early morning walk time. I have a window between the time I have my coffee and eat my oatmeal. Otherwise...I am not a happy camper. Yes, my stomach thinks it is a 2 year old and can't be late for a snack or a meal. After our walk, it was shower and lunch time. The second thing I felt lucky about today...leftovers! I know, pretty lame, but as much as I hated leftovers as a kid, I LOVE them now.
After having the fried rice lettuce wraps the other day, we decided that it would be fun to do tacos that way too. The boys are loving the interactive meals and we like them too. These were loaded with pintos, fresh salsa, hot sauce, cilantro and crushed Falafel Chips all in a crisp iceburg lettuce cup. I am not normally a fan of iceburg lettuce, but I love it filled with goodies!
I am really trying to focus on positives right now. I think it is so easy to let the negatives get to you. So, how about you...got any positives you want to share?Labels: beans, gluten free, main course, product reviews, vegetables |

Hey sweetie - glad the weather has cooled down for you too finally. I am sooo with you on the 2-year old thing. I become a beast when I haven't had my regularly scheduled snacks. I wish you and your hubby could take some time off together - sounds like you both need it in a big way. My whole weekend was filled with positives (for reasons you know from reading). Hugs!

I was got out and enjoyed the weather yesterday too! It was so nice not to be red in the face upon returning from my walk!!
I'm so glad you are feeling so thankful and blessed. It sounds like you and the illustrator have such an awesome relationship - MFEO!! :) I really have no complaints right now... all I can think of are positives: amazing husband, healthy pregnancy, baby boy on the way, good class this year, lovely home, healthy and sweet dogs, and awesome and supportive family and friends like YOU! :)

I am SO loving the cooler weather coming in! It needs to get down to upper 70s and stay there for awhile. That would make me one happy camper. :)
I love how much you share you appreciation of your husband. It puts such a big smile on my face. So nice to hear about couples who truly just care for each other and all they do for one another.

Hi Sarena! So sorry about The Illustrator's crazy schedule. Although I haven't worked days straight I can kind of relate with all the school work these days. I think the good thing I keep telling myself is that the end is in sight! We can make it through if we just focus on the light at the end of the tunnel! :)

Isn't it awful how the negatives always seem to override the positives?! Don't worry too much, though - you're all still healthy and happy, and soon everything will be back to normal. I know how tough tight deadlines can be, though! Even though it's a bummer, I'm sure you're also quite grateful that he takes it so seriously :) I am very glad you were all able to get out for a bit today, though. Enjoy your night! xo

btw wanted to let you know that I FELL IN LOVE WITH YOUR BANANA MUFFINS you posted! ive been so backed up on commenting lately that i only now saw that u were inspried by me and my muffins <3 mmm you can't avoid a muffin craving for too long hehe. i also loved that u used a banana in the freezer and one on the counter.. i have two sitting in the freezer right now... oh and they talk to me too :)

Our mom hates leftovers, it is hard for us to get her to eat them ;) LOL
But we love leftovers and always have, funny eh? HAHA Leftovers for us can be lifesavers!

My husband has weekends off, but he works so much during the week so I can relate. The positive is we've been married for 2 years today!

I'm not the biggest iceberg fan either, but you are so right, it is perfect for scooping up other foods!
The positives: I have a wonderful family and next weekend is a 3 day weekend ;)
