New Favorite Omelet Creation

Ugh, I started my day off at Walmart (for last minute school supplies) if that helps you know how I am today. When I got home we had lunch. Sadly, this was not my lunch, but after I tasted it...I wish it was!  The illustrator sauteed mung bean sprouts, then added some left over grilled zucchini and squash to the sprouts to heat them all up.  Next he added some hummus I made yesterday...
So we have mung bean sprouts, grilled zucchini, grilled squash and garlicky hummus wrapped in a beautifully delicious omelet!

I coveted thy neighbors lunch today! What is your favorite omelet creation?

  1. Yum. Love grilled zucchini and squash. I could eat that every day. I am not a big egg eater. I did discover that I prefer egg whites though (less eggy tasting to me). If i do make an egg white omelet, I like red bell peppers, onions, spinach and sundried tomatoes. Happy Sunday!

  2. Heather, I think we were separated at birth! I don't like whole eggs either! We use the egg sub or egg whites here! Your mixture sound delicious too!

  5. ooh this omelet sounds delicious - i think you should be proud of mr. man for this one ;) i've been so busy this weekend - and am SO missing reading up on your posts. I had to squeeze you in between portrait editing and pony jockey-ing ;)
    And I hear you on WalMart - ours is ALWAYS a chaotic mess. Hopefully...yours isn't :P

  6. Wal-mart... ugh... :/ The only time I go there is when I get a gift card... but I know they DO have good deals, it's just... well... Wal-mart. ;)

    I'm loving omelets more and more and that one sounds great!! :)

  7. That looks so good! I'm such a huge fan of omelets. I think my favorite combo is simply feta, spinach and hot sauce. Mmm...

  8. ha ha... I'm not picky at all when it comes to omelet fillings... buy my fav would most likely include mushrooms and feta.

  10. I'll pass on the omelet, but I steal the filling! That veggie mix sounds great, and hmmm, surprisingly vegetarian for the Illustrator. Looks like he's taking his veggies seriously :)

  14. I basically love anything in my fridge that I can throw in my omelette. When I go out to eat my fav thing to throw in are mushrooms and spinach.

  15. I love an omelette with spinach and feta cheese. The saltiness of the cheese is just amazing in it! A classic, though, is ham and cheddar. You can really not go wrong. BUT-the best omelette I've had?? A corn beef hash omelette. There are really no words to describe how amazing that omelette is :-D

    I love spinach, peppers, and feta in my omelettes. I also love avocado with it. I guess pretty much anything can go!

  18. I don't really like omelets -- did I just say that out loud?

    I much prefer over easy eggs with a side of steamed veggies rather than mixed together.

    I love reading your blog, and all the amazing recipes you have on here, the banana bread pancakes look AMAZING!

    U look so young to have two boys! They are so handsome! Happy belated bday to your oldest! I have a 10 year old son, he starts school tomorrow, I thought that was early , and then I saw your kids started last week! Wow!
