Pinto Bean Tostadas!

After our busy weekend, it would have been so easy to push the snooze button on my alarm. I have been waking up before the alarm for months now and today was no different, except that I really wanted to just stay there. I knew I needed to get moving because the illustrator relies on my moving to get up in the morning. He uses me as his snooze button. He knows that he has a few more minutes to lay there until he has to get up and get moving. I knew what work out I wanted to do today and I knew it was going to be a challenge since I was still so tire, but I had to get going! After watching and reading all about Heather's adventures with Cathe this weekend, I knew it was boot camp time! I love this work out since it breaks things down into cardio, legs, arms and core...then repeat. It takes you through 8 rounds of this and it feels great...at least in my crazy world. We also went on our walk and it was a misty mess. The weather here is GROSS! It has been overcast and misty all day. I would say that it felt great because it was cooler outside, but the air is so thick and muggy that you can't breathe. We had a great chat though and got in some good cardio since we wanted to make it back before the rain came in...which never happened.
While talking with the illustrator the other day about vegetarian meals for the whole family, we decided that pinto bean tostadas would be a great meal. The boys love interactive meals, so this was a perfect change from the soups and stews that we have been having lately. I hate eating with my hands, but I am sometimes always out numbered, so I go with the flow!
These corn tortillas were lucky to survive the smashing that the bag boy was giving them. I cringed when I saw him cram them in the bag. If I wanted tortilla chips, I would have bought tortilla chips!

a huge scoop of home made salsa! I love you summer tomatoes!
I love making foods that are normally so bad for you out in restaurants, good for you at home. We all eat together and enjoy the activity of eating!

Speaking of eating with your hands...do you like to pick things up to eat or are you a utensil person? I even eat pizza with a fork. Even as a kid. I also don't bite into sandwiches, I pull of little pieces. I am not a cram food in your mouth kind of gal.

  4. Those tostadas look super YUMMY! I can't get enough Mexican food, I must be making up for all the years I didn't have ANY! I was so deprived, lol.

    I like finger foods, but I also like utensils. I can go either way, I'm not fussy as long as it gets in there. ;)

  5. I always seem to switch it up (after I thought about the question). When I'm hungry, it's definitely with the hands. When I know I'm getting full, that's when I start to pick at it by tearing the sandwich or using a fork with pizza...

  8. i am all about utensils on sloppy food when possible, i.e. tacos, tostadas, etc...and i never just bite into a hunk of banana or something, i break off. I am not compulsive like many of the girls i went to college with that it's overkill how much i remember watching them dissect their food in the caf, but i like bite sizes, not hunks! ha

  12. I eat everything with my hands. No shame.

    I love making restaurant recipes at home too. My favorite is "fried" chicken using ground oatmeal as the breading. Gluten free version is rice Chex!

  13. I never knew you liked Cathe! I love her and her workouts. I have almost every one except for the STS weights. I love using them at home when I can't make it to the gym. I can't wait to dive into them again after the baby, since Cathe isn't too pregnant workout friendly. Boot camp is a great one.

  15. These look delicious - and it sounds like we both got stuck with the grumpy grocery store workers. bah humbug :P
    I don't mind finger foods - but I eat things with fork and knife that don't really require it, too. Like pizza, messy sandwiches, fruit even. And if I'm eating finger-foods, I can only get two fingers involved/ "dirty" lol.

  19. I like to eat with a fork and knife -- mostly because it helps me take my time when I eat. I used to just shovel it in and not enjoy the food. Now I use utensils to savor each bite.

  23. Oh we love bean tostadas at our house - we call them BIG Chips and usually use black beans - but I forget how tasty pintos are :)
