Thank you to everyone for all your kind words! Vince is doing really well and my sister is too! I am feeling really good about that and my therapy for being far away has been cooking!
Mini gluten free regular and jalapeno cornbread muffins (I am not especially proud of this, but we ate the entire pan in one sitting)...
to go with our favorite chili...
and fresh corn from the farmer's market with a baked potato for leftovers (for me)...
since I was not going to have fried chicken (now I regret letting my husband know I can make fried chicken)...
I am completely enjoying apple season...gala apples that don't taste like mush!
I bought me some pie pumpkins since I can't find pumpkin yet...
baked a fresh loaf of whole wheat bread...
today I am attempting to make this gluten free...
perfect to have with...
That about sums it up. I am baking more today! Therapy!
In other news...my DVR (which is what I workout to) broke! Ugh, the frustration...I lost ALL of my workouts! So, the past couple of days I have been putting stuff together from exercisetv.com. Not bad, but still...I lost everything. We also hiked in the woods yesterday, so that felt good. I needed the fresh air even if I am a bit of a sissy since I know the snakes were looking for me!

I bake and cook as a stress reliever too. So soothing...but not great for fitting into my jeans, ha! :-)
