Spaghetti Dinner


Have you seen this? I found it at the store the other day and while I am not a chocolate person, I had to try it. It is so good. Very chocolatey and smooth!


Chocolate meet coffee, coffee meet chocolate...not surprisingly, they are now best friends! Since I can't have mocha coffee drinks out, this was perfect!  


We had a big spaghetti dinner last night and while the boys had pasta (gluten filled and gluten free), I cooked spaghetti squash for me...cause I love it.


However, this one was just not good. I think it was picked too soon. You know I can't throw anything away. This is a huge lesson I have been teaching the kids...fresh foods are a little on the unpredictable side, but you still have to eat them.


It was really sad, but with the help of some grilled zucchini and yellow squash and a little melted Daiya (cause even good fake cheese makes things edible) this was a passable meal.


The worst part was when I had to eat the rest of the spaghetti squash when I already finished off the other squashes. Oh well, they can't all be winners.

I am off to make fried chicken now (I know, shocking) since it has been a year since the illustrator last had fried chicken and my southern boy is going through withdrawals. Wish me luck because seriously, this healthy eating southern chick does not do fried anything. I will let you know how the dairy free gluten free fried chicken turns out...I will be eating mashed potatoes and gravy though.

  1. I love spaghetti squash too! Bummer that yours wasn't a good one. At least you were able to salvage it!

  2. Silk Pure Almond is one of the only commercial mylks that I can have. So exited to see chocolate! Can't wait to find it here!

  3. Oh I haven't seen that and while I am not a chocolate gal, I do like hot chocolate in my coffee. Need to look for that! Yummm on the spaghetti squash I haven't had any in a while - thinking that needs to make the next grocery list. Hope you have a great night!

  5. I have found the light squashes never taste good! Go for the darker yellow/light orange ones, they are sweeter and have more flavor..also the more dense it is matter!...I sound like a spaghetti squash conoisseiur . I just love it. I used to be OBSESSED with aka eat it all the freakin time..when I had some ed still. Now I enjoy it once in a while ahah

  9. i just saw that silk pop up in the store. i was curious, but not curious enough to have a whole container of it!
    bummer about the squash!! i'm like you, though- can't stand to throw things out. I also just try to cover up the taste, haha.

  11. My parents lived in Alabama for 5 years before I was born (my dad taught at Auburn) and once a year he requests fried chicken and my mom pulls out all the stops for him. And the next day they go back to salads and tempeh. :)

  12. that choc silk..omg i didnt realize they had CHOC silk. I just thought plain and vanilla, i am sooo all about that!

    squash and getting a bad piece of fruit/veg...ugh. Nothing worse. Mushy tomatoes are right up there on my ugh list too!

  13. it's nice to balance some fried chicken with spaghetti squash--my FAVORITE fall veggie. I usually just bake it and then scrape at it with a fork then top with olive oil and salt. SOO GOOD!

  14. I am the only one if my house who likes spaghetti squash too - bummer it wasn't that good!

    Good luck with the fried chicken - I make it about once a month when cut up chicken is on sale.

    I need to find that dark choc almond milk! I'm not a big chocolate milk person, but that sounds delicious!

  16. spaghetti squash is probably the only squash i have yet to try. its neat seeing people open it up to reveal the crazy strands in the middle! im betting it tastes like butternut squash huh...

    omg dont tempt me with fried chicken haha. i can smell u cookin' it already MMMMMM <3

  18. I had a bad spag squash the other day too. I've also noticed the organics taste better than the non-organics. The non was SO bland. Idk if maybe that had something to do with it? Sucks you had to eat it!!!
