Gluten Free Butternut Squash Spice Muffins

Today has gotten off to a running start. My parents are coming in to town from Virginia so we have a few things that need to get done before this evening. Even though we have been working nonstop on this place, it feels like we always wait until last minute to get things done. It is so frustrating. Hopefully it won't take us too long since we have been cleaning a lot along the way. I hope anyway...

Let's go back to those butternut squash spice muffins...


The past two years, while everyone cuts up their pumpkins, I have taken it upon myself to bake with some of the goodies we get from the pumpkin farm.


This year, I got two butternut squashes and immediately got one in the oven for some fall treats.


Next to pumpkin, butternut squash is my favorite roasted fall squash...


These are dense little cakes full of spice and slightly sweet.


Gluten Free Butternut Squash Spice Muffins

1 cup almond milk
1 TBSP apple cider vinegar

Mix these together and allow to sit while you get the rest of the ingredients together.

2 TBSP flax meal
6 TBSP hot water

Mix these together and allow to sit while you get everything else together.

2 cups gluten free All Purpose flour  (I used Bob's Red Mill)
1/2 cup buckwheat flour
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 tsp pumpkin pie spice
1/2 cup dark brown sugar
15 drops vanilla stevia (or 1/4 cup brown sugar)
2 cups roasted pureed butternut squash
3 tsp sugar (for topping)

Preheat the oven to 400 degrees. Line or grease a 12 cup muffin pan.

Combine the flour through the brown sugar. Next add the soured milk, flax egg and butternut squash. Mix well to combine. Evenly scoop the batter into the prepared muffin pan. Then sprinkle 1/4 tsp sugar over the top of the muffins.  Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.

**You can sub all purpose or white wheat for the gluten free, but I have not tried it so if you do, let me know how it turns out!


So I have to know...am I the only one out there that does the marathon cleaning before people come over or do you do a little at a time? I am off to wash sheets now...

  3. Have fun with your parents and goodluck with the cleaning! When I have weekend visitors, I always start on Monday or Tuesday and focus on one thing a night. My attention span isn't long enough to do it all in one day/night... :)

    I'm definitely a marathon cleaner. A couple weekends ago I spent all day Saturday doing a deep clean before my parents visited. :)

  12. Oh yes, I run around the house like a crazy woman anytime we have people coming over!! I'm very paranoid about people thinking our house smells like our dogs, so I go crazy with air fresheners and washing and scrubbing everything!!

    Those muffins look sooooooo wonderful!! I am going to show these to Andrew. I bet he would looooooove these!! :)

  13. I'm ALL about marathon cleaning. I try not to leave my apartment a total mess but I'm all about cleaning up all at once. I can just imagine the delicious smell of these muffins!

  20. I have never seen butternut squash muffins before. They look great. How nice to get time with your family too. I try to remember family first, and am trying to choose a healthier lifestyle for mine. Your diet challenges must make that difficult.

  21. I always marathon clean. The only room in the house that stays remotely clean is the kitchen.

    I have read several conflicting reports on buckwheat being alright for wheat allergies. My son has a wheat allergy, and I am trying to be as careful as possible. What brand do you use?
