I am pretty sure today was the start of the insanity for me. Kind of that lurking calm before the storm. The illustrator and I did not go on our walk because we really had far too much to do in order to get to the point where we are ready to make a mess. He finished his book (YAY!!!) and so he mentally is on a little break. I can tell a huge difference in even something as simple as his facial expressions when he gets these things off his shoulders. So, we ran to Hobby Lobby together to get some stuff for a photography presentation Jay is contributing to and then we went to the grocery store for a few odds and ends before my in-laws get here so they will be well fed! How in the world we spent $100 at the store when we only went for a few things is beyond me. I won't lie though, a pumpkin may have leaped into my cart so I could roast him. Yes, I can get canned pumpkin, however, the pumpkin was $6 and will make probably more than 10 cans of pumpkin. Oh and I need some to try this recipe from Heather. I think I will be covered on the pumpkin front for a while.
Now for my odd dinner. We cooked a brown sugar glazed ham for the boys tonight and I had a little experiment cornbread in the fridge waiting to be used. I thought I was covered and forgot I did not have a protein for dinner. Enter my not spam salad. The illustrator said it sounded and smelled good, but that it looked like spam salad. Um, no it was a peanut butter apple carrot salad (made with peanut flour)! I thought this would be a perfect main dish to go with my buttercup squash yeasted cornbread. Well the salad was incredible, and might I add it had 16 grams of protein in it, but the cornbread was not good.
See, it looks all innocent and smelled incredible, but the yeast just made it taste off. The illustrator actually asked me if every meal has to be some creation. Um, no, but it seems to be how my brain works lately. I can tell you this, there will be normal cornbread in my very immediate future! This was just a tease.
I guess this goes to show you that pretty things can taste nasty while ugly things can taste delicious...never judge a book by its cover.
Speaking of creating, this was a dessert pizza I made using the same cornbread, but it was the day I made the dough. I am thinking the yeast got over developed? This was really good though...buttercup squash pizza with a cornbread crust. I am not giving up on this...there is something there. I will accomplish what I set out to do. Like how I got all hero like with my baking?
So, operation tear down the room starts tomorrow. I hope for some calm in the madness!
Oh that sucks that the cornbread didn't turn out. Jason has asked me a similar question - he always laughs at me b/c I'll just start rattling off recipe ideas. He is convinced I just can't stop and I can no longer have a "normal" dinner. Thanks so much for the mention. I really hope you try the recipe and like it. If you're not using canned pumpkin (which is softer) I'd add in some soy or almond milk to make sure it's smooth and creamy. I hope you have a great evening!

ReplyDeleteI was going to demand that cornbread recipe if you didn't post it, but then I read on...bummer it didn't turn out how you wanted! Sounds like an amazing idea, though - I have faith that you will develop it into something stellar ;) It is true, though - the ugly foods are always the best!!

I had to read after seeing a Spam reference..I was raised on a lovely concoction of spam, mushroom soup and white rice. My mother referred to it as meat-on-rice; I called it First Generation Irish Yuck.
ReplyDeleteCornbread can be temperamental, sadly, which is a negative character trait for such a divine food.
I hope your husband can take a bit of a mental break in between projects! My dad eats Spam and eggs probably once a month for breakfast. Gross.
ReplyDeletei was at an appt yesterday and a guy was eating a spam roll. a tofu roll, nori and rice and the inside was spam + egg. Not ever in a million years my kinda food, but that's my spam story :)

ReplyDeleteI remember leaving pizza dough in my fridge to proof overnight once. The next day when I got it out, it smelled so much like beer I couldn't stand to even try and cook with it (I guess it was the yeast then too :( ).
And if it makes you feel any better, I made some cornbread the other day. Like yours it came out of the oven looking fabulous, but smelled kind of .....wrong. When I tasted it it tasted like the cornmeal had gone rancid so I threw the lot out. It took me 2 days to figure out that it was the buttermilk I used in it (apparently I really don't like buttermilk!).
