I have started my Thanksgiving preparations in the food area too. We decided to cook a little turkey and dressing today, since I need to make some gluten free dressing to take with us. I will vacuum seal it and freeze it so it will be perfect for Thanksgiving!
The cornbread was made first thing this morning and now it is "dressed" up waiting for the turkey to be done for tonight! I hope we can keep from eating it all before Thanksgiving!
We are having Thanksgiving at my sister's place this year and the discussion has already begun as to what we will eat and if there will be things there for us (meaning those with food restrictions). Honestly, we are the easiest to plan for. We don't do casseroles really other than dressing, so we are pretty easy to please. Even our desserts are fairly simple and I will be making a few for us. My favorite is the crustless sweet potato pie (I have been dreaming about this all year). Everyone was so surprised by this one last year and I can't wait to make it again this year!
Since there is a large group of us when we get together, the boys (meaning all of the son-in-laws) tend to smoke some kind of meat with my dad. So, I am seriously considering doing my bbq stuffed eggplant. I think throwing an eggplant on the smoker to go in this would be amazing!
So, I started this post this morning and now it is after 2pm, I haven't showered yet and I have already had to pick Jay up from school sick...hhhmmm headache and stomach pain, I am seeing a celiac test in his near future.
So, do you cook anything for Thanksgiving? Do you accommodate those that have restrictions or do they bring stuff?
I need a few more hours in the day!
So glad the sore throat is gone. I am the one with the restrictions typically, though this year my sister is too since she's had to go gluten-free. I'm loving not being the only oddball ;-)
ReplyDeleteI am going to make your bread to take (can't wait to try it out) along with some veggie sides. My dad does make some of his spaghetti sauce for me sans meatballs at least.
The sweet potato pie looks so good! I noticed that in the recipe it calls for liquid egg replacer. I am vegan and its hard to find a liquid egg replacer that doesn't contain eggs. Can I use Ener G egg replacer (powder)?

ReplyDeleteThanks Lauren! I have not used egg replacer before, but I think you could use it here. It is used to bind it and I believe that is what egg replacer is for.

ReplyDeleteThe eggplant sounds like a great idea. I can't have sugar right now so I'm nervous about my Thanksgiving options. I'll probably make something to bring so I don't feel weird if there's nothing there I can eat.

ReplyDeleteI love cornbread stuffing. I've only had it at my friends houses. My mom's family does a very traditional thanksgiving of turkey, green bean casserole, mashed taters, cranberry sauce, etc. I thinik I prefer things a bit more "untraditional"!
I could use a few more hours in my day too!

My mom actually just emailed me asking if she should bake a tofurkey for the vegetarians (aka me) in the family. I laughed :)
ReplyDeleteI hope Jay feels better!! I'm glad you are, too. I'm so sensitive when I think I'm catching a cold, too. THe slightest scratch/grogginess draws extra precautions!!
ReplyDeleteI am looking forward to making stuff for Thanksgiving. Even though my mom brought home bagged stuffing and canned cranberry sauce from the store today. I scolded her in a nice way :P We all loved the cranberry sauce I made last year, and I'd love to make homemade stuffing/dressing. Don't know what else!!

I am cooking. For the 3 of us. Vegan, nonvegan, GF, not GF. The one meal a year i am cooking JUST for scott :) with 0 ability to eat it myself but i am happy to do it!
Man, I'm kinda glad our Thanksgiving is over and done with - but also a bit jealous because this year we didn't really do anything. Maybe I'll have to cook something festive...like your crustless pie (it looks beautiful!)

ReplyDeleteI'm not cooking, really, I'm usually in charge of the appetizer which this year is a roasted apple, shallot and pecan salad with feta and cranberry vinaigrette. Easy peasy!

ReplyDeleteMy dad always makes the BEST sweet potato pie for Thanksgiving! Of course, I haven't been home for Thanksgiving since I left for college (I've lived too far!), so I usually beg him to make one at Christmas too!

ReplyDeleteLee, I have gotten it at Kroger and the health food store. It is a very sticky rice flour and it works great here to hold it together!
