Caged Animals!

Yep, it is starting to feel like we are caged animals here! The boys are out of school again today. Don't get me wrong, I love them being here, but we can't go anywhere. It would be different if we could get out, but no, ice is everywhere. Yes, I know people up north think we are crazy, but you see there are quite a few of us here in the south, that drive like idiots. So, the illustrator and I tend to stay off the roads as long as there is ice everywhere. We have been watching people spinning their tires trying to get enough momentum to go up the hill by our house to get to the end of the subdivision. Not so much fun when your kids are out playing and you don't know if the person's car is going to run off the road! So we we have been like caged animals! The sun is shining today, so while it is still freezing, things are melting.

The illustrator and Max went on a walk yesterday and these are some shots he got along the way...

Perfect way to enjoy being caged...hot cocoa and cinnamon bread!
This one is with gluten...

and this one is gluten free...

The boys like them both equally. I made a loaf of each for Sunday night and this is the last of it yesterday. Baking is definitely on the agenda for today! Baking therapy is a must!

There has been a constant pot of hot cocoa on my stove for days now. Since there has been a constant flow of freezing kids in and out. This is one of the easiest things to make and you can make it however you like it! I called my mother-in-law to get her recipe and she told me that it wasn't a recipe, she just put the ingredients in the pot. So, with her guidance, I just threw things in the pot.

Hot Cocoa
(makes 3 mugs)

3 cups almond milk or coconut milk (So Delicious Vanilla Coconut Milk is perfect for this)
1/3 cup cocoa powder
1/3 to 2/3 cup sugar (depending on how sweet your milk is or how sweet you like your cocoa)

Mix everything together and warm it on medium heat on the stove.

Since Atlanta went a little crazy on the hoarding of foods on Friday due to the scare of inclement weather...let's talk about hoarding for a minute. I will confess to buying 16 super large organic fuji apples that were a ridiculously low price last Friday. I was probably the only freak at the store that day not buying milk or eggs. I now realize that I should have bought more dish washing detergent! I am very against hand washing due to childhood scars of washing way too many dishes. I praise and applaud my dishwasher every morning!

Now for the embarrassing part, I have eaten' all 16 as of yesterday. Yes, they were almost the size of my head! They were so good and what can I say...I was celebrating that they were still in season!

Spill it...do you hoard anything? Amy, I know you have a stockpile of Kashi in your pantry! When I could eat Go Lean Crunch...I did too!

I am sharing my gluten free version of my cinnamon bread on The Wednesday Carnival.

  1. I think its definitely a good idea to stay inside - even though it can lead to stir craziness! We got way more snow than expected overnight (12 inches!) and so I'm not going anywhere either. I'm planning for an at home workout, some crafts and lots of reading. :) Hang in there!

  2. Also - I'd say I hoard nut butters. Pretty typical, I know. I can't blame you for your love of apples. :)

  3. I hoard canned pumpkin...especially after it was so hard to get this fall!! :-)

Great snow shots! That bread and cocoa look like great treats for a cold day!

  4. I sort of know how you feel, but I'm not totally minding it yet. We got snow last night, but not enough to get a snow day apparently. I took the day because my street isn't plowed. Enjoy your day! I hoard pumpkin btw!

  5. Isn't it funny when you really want to be stuck at home you can't-but when you are you're ready to break free!!!!

  6. LOL - I would have been buying the fruits and veggies over bread and milk too. Oh wait...I did! I hoard toilet paper. I'm a total freak about it. That cinnamon bread looks so good. Wow. I wish I was snowed in with you guys!

  7. When I was younger, I think it was a relief after the 2nd or 3rd day when we would finally get to go back to school or what have you- in a rural area that is frozen over, there's not much to do other than sit around and start to annoy one another... yikes!

  8. I'm with you on feeling like a caged animal. I'm in Greenville, SC and people around here drive the same, if not worse than in Atlanta. :D

  10. I'm all for baking therapy! If I bake too much during a snowstorm though....I end up eating too much too because it's just sitting here looking at me!

Even in snowy climates...people driving like dum dums in the snow!

I'm hibernating, but also getting stir crazy :)

I don't hoard much...used to hoard these magic chocolates called Cacao Berry Clarity...they even gave me a bulk ordering discount because I ordered so many!

  15. Thats why I dislike living in the North East. Although the winter snows are 'mild' in DC, its enough to make this Texas girl grumpy ;)

  16. Love this cinnamon bread recipe! I am a huge fan of quick bread/muffin recipes, and I'm gluten/dairy/egg free too! I also avoid cane sugar... so I'm going to try an agave or coconut sugar version of this recipe. :) Thank you so much for the inspiration! yummmmmm

  17. We had some ice and snow here, too. Even people in the north and 4 wheel drive vehicles have trouble with ice, so I think staying in was a good choice. Your cinnamon bread looks delicious!

  18. Just realized I didn't even answer your question!

YES- and the answer is cereal. Some Kashi, but I do have to say, I've been on a crazy Special K kick... weird, right? And I also used to (but not so much anymore) stock pile energy bars. Basically, carbs in general...

  22. My name is Laura, and I am a canned pumpkin hoarder.

So jealous of the gorgeous snow you guys got! I knew we should have moved to Atlanta!!! :)

  23. The thing about snow is that it looks pretty one day one... then it is all ice and sludge. You wouldn't believe what Peachtree St looked like - literally a skating rink!

I had a mini-grocery store fail too. Things I should have bought... toilet paper. Ha!

  24. I hoard Greek yogurt. Fage and Chobani. I think I have 16 in my fridge now. No, there wasn't even a sale.
