Fancying Up My Cereal... |
Officially, the kids are out again today, but who cares at this point...it's FRIDAY! This does mean they won't be back in school until next Tuesday. Officially, we all need a vacation! The illustrator ventured out with Max late yesterday afternoon to see what things looked like and to grab a few necessities (oatmeal, apples, dishwashing detergent, deodorant...) from the store. He said the roads around us are still really bad (we live an hour outside of the city) and that there was no milk at the grocery store...so he bought wine instead. Probably a good call, but I am not sure how good that will taste on his cereal. He said he feels like the guy who discovered that lobster tastes good. You won't know unless you try it. This is one of the major reasons why I love him!
Speaking of cereal, I have been making my own. No, I am not crazy...it's like making granola. So, when Jay was eating gluten free for a couple of weeks, I had to get kind of creative, so I made some using my granola method. I know, why not just buy it? Well, gluten free cereal is really expensive, so we bought a gluten free corn flake cereal (much cheaper) and I added some things to make a gluten free/dairy free brown sugar corn flake cereal. Now I need a catchier name for it! I will gladly take suggestions!
Do you do cereal with or without milk? Typically I go without, but on very rare occasions, I will have a little splash of almond milk in there and maybe a banana.
Clearly I have too much time on my hands...you get the same shots with different angles. Fun, no?
This is a crispy cereal with oat clusters and a hint of brown sugar sweetness! Perfect for breakfast or a treat!
Gluten Free/Dairy Free Brown Sugar Corn Flake Cereal
3 cups corn flakes (make sure they are gluten free if you need them to be)
1 cup quick oats (I used Bob's)
2 TBSP flax meal mixed with 6 TBSP hot water (sit aside for 5 minutes)
1/4 tsp salt
1/4 cup brown sugar
10 drops NuNaturals Vanilla stevia
Mix everything together is put on a parchment lined baking sheet. Bake at 275 for 45 minutes to an hour stirring every 15 minutes. It will crisp up more once it cools.
Atlanta is warming up a bit today, so I think we will be getting out at some point this weekend! I don't know where or what we will do, but we will definitely venture somewhere!

Cool that you're making your own cereal!! You're right-- I never think twice about homemade granola, but homemade cereal I've never thought about!

Haha, I love the Illustrator's comment about lobster. Made me laugh. According to my dad, he once had beer on cereal in college. He only tried it that once. :)
I love the idea of making your own cereal - that way you know exactly what is in it.

I probably would have chose the wine over milk anyways- even if it was there. Because seriously... after being snowed in that long, you need a break!
And when I was just eating straight cereal for breakfast (vs pouring some over my oatmeal), I ate it without milk. Soggy cereal is gross!

Like Heather, I often put cereal in yogurt. Because of my inability to tolerate high-fiber/hard to digest foods, I find it's a great way to still eat the granola cereals I like. Your recipe sounds fantastic! Making cereal isn't something I've ever considered, but I may just have to try it out... :)

I saw a segment on the news earlier about the ice down there and immediately thought of you - yeesh, that's some ice!! I hope it all clears up soon and you can get out this weekend! ...and get some milk. Not sure about the wine + cereal thing either, but I'll give him kudos for the "you never know until you try" sentiment ;) This cereal looks amazing. How cool is it that you make your own?!

Ok you HAVE to make those Special K bars i posted about the other day. Use corn flakes, but if you like flakes + brown sugar + vanilla, you have to make those :)
