Fancying Up My Cereal...
Officially, the kids are out again today, but who cares at this point...it's FRIDAY! This does mean they won't be back in school until next Tuesday. Officially, we all need a vacation! The illustrator ventured out with Max late yesterday afternoon to see what things looked like and to grab a few necessities (oatmeal, apples, dishwashing detergent, deodorant...) from the store. He said the roads around us are still really bad (we live an hour outside of the city) and that there was no milk at the grocery store...so he bought wine instead. Probably a good call, but I am not sure how good that will taste on his cereal. He said he feels like the guy who discovered that lobster tastes good. You won't know unless you try it. This is one of the major reasons why I love him!


Speaking of cereal, I have been making my own. No, I am not crazy...it's like making granola. So, when Jay was eating gluten free for a couple of weeks, I had to get kind of creative, so I made some using my granola method. I know, why not just buy it? Well, gluten free cereal is really expensive, so we bought a gluten free corn flake cereal (much cheaper) and I added some things to make a gluten free/dairy free brown sugar corn flake cereal. Now I need a catchier name for it! I will gladly take suggestions!


Do you do cereal with or without milk? Typically I go without, but on very rare occasions, I will have a little splash of almond milk in there and maybe a banana.


Clearly I have too much time on my hands...you get the same shots with different angles. Fun, no?


This is a crispy cereal with oat clusters and a hint of brown sugar sweetness! Perfect for breakfast or a treat!

Gluten Free/Dairy Free Brown Sugar Corn Flake Cereal

3 cups corn flakes (make sure they are gluten free if you need them to be)
1 cup quick oats (I used Bob's)
2 TBSP flax meal mixed with 6 TBSP hot water (sit aside for 5 minutes)
1/4 tsp salt
1/4 cup brown sugar
10 drops NuNaturals Vanilla stevia

Mix everything together is put on a parchment lined baking sheet. Bake at 275 for 45 minutes to an hour stirring every 15 minutes. It will crisp up more once it cools.

Atlanta is warming up a bit today, so I think we will be getting out at some point this weekend! I don't know where or what we will do, but we will definitely venture somewhere!
