Great Weekend With Great Eats!

My thought last night was to get up early to work out today. My thought this morning when I woke up before the alarm went off was to stay in bed and move Monday's workout to Saturday. I did not sleep well last night and my upper back feels like I have been sucker punched. I asked the illustrator if he knows anything about this and he said it wasn't him. I will take his word on it, but I am going to have to sleep with one eye open from now on. I think I need a good stretch today. After hiking this weekend and being a little more tired than usual, I think I good stretch day is in order.

Truth is things feel weird around here with the kids only being back in school for 4 days before they were on a 10 snow/ice break and then being off today for MLK Day.  I am not ready for them to go back to school, but I am missing a routine. We talked about going to go on another hike today, but now there is some discussion of going to see True Grit. I am not sure if that will happen, but we will see. I have the itch to do some bread baking today. I have an idea and when that kind of stuff pops into my head, I have to try it or it drives me crazy! I know I am weird that way, but it is how my brain works.


As for the weekend, it was incredible! I don't know why, we did not really do anything out of the norm, but we did all spend some great time together enjoying movies, hiking and eating!


I made my gluten free angel food cake (do you see the piece in the center missing...yeah, someone felt like it needed to be tested before the rest of us got our hands on it)...




this stuff is to me what chocolate and bacon are to others...


with coconut to celebrate all the snow!


Speaking of bacon, the illustrator has found a new way to enjoy all that is brussels sprouts!


This was his creation and he fell in love with it served over mashed yukon gold potatoes.


I enjoyed my oven roasted brussels sprouts over a baked potato smothered with nutrition yeast!


After hiking we enjoyed crockpot lentil stew over steamed cabbage. This was my first time making my lentil stew in the crockpot and I really liked it. I want to play with the flavors a little more, but I am really loving the crockpot lately. 


Well, I guess I need to get moving if I am going to get anything done today. I am off to stretch then time to make some bread!

  1. So glad you had a great weekend! Makes Mondays so much harder though doesn't it? I hope you get a chance to get some baking done today. And I need to get the angel cake recipe! Looks fantastic.

  4. yumm all that food looks so good! I love angel food cake I used to have it every year for my bday!
    It'll def be different having them back at school:( But getting back to a routine is always nice!!!!

  6. ah angel food- my g'ma would always have it around when we'd visit. It's my dad's cake of preference for his birthday, too. :) Yum.

    I'm sorry to hear this sleeplessness thing seems to be going around! Maybe we'll be luckier tonight?

  8. I did shredded brussels sprouts cooked in bacon fat and crumbled with bacon a couple months ago... it was sooooo good! :)

  13. Hey Sarena! I can definitely relate - it feels weird around here too. The holidays, the snow day last week and then the long weekend has me longing for a schedule. So glad that you had a great weekend, though. Angel food cake is one of my favorite desserts. Looks awesome! :)

  14. Hope you're feeling better after a day of rest! Sounds like a fun weekend, though - and when it comes to getting ideas in your head? I am very much the same...I need to try it right then, there's no way I can wait more than a couple of hours!! Can't wait to hear about it if you were able to find time :)

  17. OMG Love angel food cake. We used to eat it all the time before going vegan...um, maybe we will just have to make it again!!

    I hear ya I missing a routine. I am trying to get back into mine, so far not happening. haha one day at a time...

  20. I love love LOVE my crockpot. Never used it for lentil stew though, and I think I need to try that out soon.

    I am so the same way when an idea pops in my head. I think it kind of drives CD crazy. Hehe, he's always making fun of my never ending to-do list.

    We're having friends over this Saturday for dinner, and I want to make your seven minute icing as one of our guests is dairy-free. I think I'll use it to frost some almond flour cupcakes...and perhaps for the main course, will eat some bacon...Illustrator style. ;)
