Matcha Cookies For The Green

I can't say we celebrate St. Patrick's Day here. Yes, I wear green (I don't like to get pinched...oh, that reminds me, I need to pinch the illustrator he is rebelling today with no green). I have a four leaf clover tattoo, so I wear green all the time. Truth be told, it is my favorite color. I also eat my greens...ALL...THE...TIME. So, when I started to think about what in the world I could make to celebrate the holiday, I was having a hard time. Honestly, I only cared because the kids asked. It finally came to me this morning. I decided to make matcha cookies!

I took my snickerdoodle dough ball recipe...


 made a few changes and added some green tea.


These little treats came together so quickly.


I love a quick treat.


They are dense, chewy and slightly sweet with a hint of green tea. Perfect for our afternoon treats. Do you do afternoon treats or is it just our family that act like 2 year olds and need a snack at 3:00 everyday?


I loved the color combination on these and I will definitely make them again with other colors.

Matcha Cookies
(makes 19)

1 cup white rice flour (I used Bob's Red Mill)
1/2 cup brown rice Flour (I used Bob's Red Mill)
1/2 tsp salt
1/2 tsp baking powder
1/2 tsp xanthan gum
1 /4 tsp pumpkin pie spice
5 TBSP sugar
1/4 cup egg white (or TBSP flax meal mixed with 3 TBSP hot water or 1 egg)
10 drops vanilla stevia (or 2 TBSP sugar)
1/2 cup unsweetened applesauce
3 TBSP almond milk
2 tsp matcha green tea powder

2 TBSP sugar for rolling the dough balls

Combine the white rice flour through the 5 TBSP sugar in a mixing bowl. Next add the egg through the almond milk and mix until combined. Split the dough in half and place the halves in separate bowls. Mix the matcha with one half of the dough until completely combined. Using a small scoop, scoop a little bit of the white dough and a little bit of the green dough into the scoop. Roll the dough to form a ball and then roll it in the sugar. Place the cookies on a parchment lined baking sheet. Bake at 350 degrees for 18 to 20 minutes. 


Do you celebrate St. Patrick's Day? I never really have since I don't like beer (I know shocking) and really isn't that what it's about? We decided to have fish n' chips tonight since the illustrator hasn't had that in years and he loves it. So, I am heating up the oil again...ugh, I hate fried foods. See what I do for love?

    I'm wearing green to avoid the pinches, but that's about the extent of my celebration :-)

    I didn't wear green today -- oops. I have a green water bottle though, does that kind of count?

    We aren't really celebrating tonight -- I'm making dinner and we'll probably hang out at home!

  7. YUM these look so good. I have not had a snickerdoodle in far too long, and I love matcha. bookmarking this!

    I'm not really a St Patty's Day fan at all... I eat a lot of green food, so posting green today was easy... I did make some bright green cupcakes today, though.

  9. I almost "awwed" out loud as I imagined you all sitting down together for an afternoon snack. I always have an afternoon snack, but it's usually alone, haha.
    The cookies look wonderful!! I love having a "base" recipe that you can flavor just about any way you want.
    No beer for me, either. It's something I've nevvver had a taste for, even when I did drink. I'd always think "I'll acquire a taste for it. I WILL like beer..." but no. Just no...haha.

  10. I sort of did my little st. patty's "hurrah" last weekend. And even then, I wasn't out there like everyone else... never was my thing. I don't really get it...

    I celebrated today with bday cake. And someone gave me a massive bakery cookie. WHich totally ruined my dinner. shucks...

  11. I used to be a big fan of drinking green beer and all of that, but now I'd much rather eat green cake or cookies like yours.

  14. Anything snickerdoodle is worth indulging in!! Those look great. I mainly celebrated today by eating a ton of green foods, wearing a green necklace (I forgot to bring anything else green home), and we're making a traditional Irish meal tonight!

  16. These look lovely! I totally need a snack at 3 -- I usually have a handful of almonds or something along those lines.

    I'm 100% Italian, so I don't really do St. Patty's day...in a couple of days I have St. Joseph's Day, so I'll wear red. :)

  22. I don't "celebrate" St. Patrick's day besides wearing something green. Some people are SO into it though, which is always a little odd to me. Good for them though, I guess, finding joy in the little things :)

  24. Don't like beer?!!? I had a few beers and that was the extent of my celebrating. Darn hubby that doesn't like corned beef OR cabagge!

  25. Great idea for cookies! I have green eyes (they count right?), but I also wore malachite earrings and a jacket that had green in it yesterday. No celebration this year ... it just depends on the year and who's around. ;-)
