Mellow Yellow...

Today is crazy, the illustrator is getting ready for a convention so I have been running errands and doing things to generally help him out. I hope to make a small batch of con cookies for him a little later to take on the plane and hopefully we will get some relaxation this evening. Honestly this past month has been way too stressful. I am hoping this will all lead to calmer times soon!


My lunches seem to be pretty repetitive and very mellow yellow lately. I'm thinking my sub conscience is trying to tell me something...


Two days in a row I have been loving on some steamed cauliflower, fresh spinach, over easy eggs and today I got crazy and added roasted yellow pepper with spicy brown mustard! Ya gotta love getting your B's in! Seriously, the combination of the egg yolk and the mustard...so good.


After some bartering yesterday (I have to cook bacon if I want pancakes or waffles for dinner) I got to have my pancakes!


These are very caky pancakes piled high with blackberries (freshly picked last summer by my father-in-law) and smothered in peanut butter sauce (just a little peanut butter mixed with a little almond milk and heated for a few seconds)!

Pancakes make me happy! You all knew I had to celebrate National Pancake Day...I accidentally celebrated National Peanut Butter day too, but really that happens ever day here.

Did you celebrate...do you even care? If not, what did you eat last night? Seems weird, but I need some new ideas.

  2. Oh that PB sauce idea is so insanely simple and fantastic looking. YUM. I really hope things calm down soon for you sweetie. I bet that stress isn't helping the tummy troubles either.

  4. I had some PB yesterday, no pancakes though!

    Last night we had some leftover chicken/veg stir-fry and a baked sweet potato -- we are going out of town this weekend so we are cleaning out the fridge.

  8. I knew it was national pancake and peanut butter day. Two of my most favorite things. Did I celebrate? Not at all... lol Apparently I prefer to rebel on the official day... ha ha

    Pancakes are more of a weekend thing for me, anyway. And the more cake-like they are, the better! :)

    this is my meal of choice, starting yesterday -- I had to make it again today!

    I celebrated pancake day this morning -- by making pancakes for my husband -- one with loads of unsweetened chocolate in it! I'm still cleansing so no brown rice flour for me.

    I'm excited to eat eggs again, too...yours look so delicius and full of B vitamins!

    I hope things calm down for you soon, and that you're feeling better!

  16. SO much goodness in this post! Are you sure you don't want to move up to VT? I think my neighbor wants to move...you can have her house... ;) Love the pancakes. Ironically, as often as I'd been having pancakes - I haven't had any yet for pancake week/day/whatever it is!
    I (without realizing it) celebrated pb day yesterday with my pb-banana-fig bake. And dinner ideas? Well, you mentioned checking out that mac and cheese I posted - so I'll mention that again because I really enjoyed it! I bet it'd be good with any grain or brown rice pasta too. I mean...my mom ate it without my offering...you know it's a winner ;)

  18. I had make your own breakfast sandwich bar at the sorority house I live in. I had a baked potato with salsa egg whites and random asparagus and broccoli. Mixed all together it was surprisingly great! I need to get some over easy eggs into my life. yumm!

  22. Holy heck - those pancakes look incredible!!! I seriously LOVE pancakes and it's been too long since I've made them at home.
    Last night I made a sweet potato sheppard's pie - I can't wait for the leftovers for lunch today!

    Last night for dinner I roasted some carrot, baby beetroot, and onion. sauted greenbeans broccoli and LOADs of garlic then sprinkled with sesame seeds and sesame oil. and ate it with quinoa. Yum!
