Quickie Hash Brown Dinner
I think my favorite thing about blogging is the fact that all my weird food and exercise rituals are validated by others that share the same! It appears as though most of you have the same love of pickles that I do. I am a dill girl through and through. I can NOT do sweet pickles. Oh and I love that some of you drank pickle juice...me too! I mean why not? It's just more of that good flavor! We recently tried the ones with tabasco in them and that jar did not last 2 days here. Those suckers were GOOD! The juice from that jar made a night dressing on my salads!

So, thank you to all of you for validating my freakdom...I guess we are all in the same club!

Last night was crazy town here. Jay had a band concert and ironically needed a new pair of black pants since he out grew the last pair I bought him in December! Well, not horrible grown out, but enough to make him uncomfortable and make me have to run around like a crazy lady all afternoon for another pair of pants. I LOVE TARGET. I know I'm not alone here, but I can't walk out of there without spending $70. Sadly, I bought nothing frivolous for myself...you know the usual, shampoo, soap, powder...how does this stuff all add up? Anyway, the good news is that he is growing...the bad news is that he only wore those pants once! Oh and for those of you out there that are going to have kids or who have young kids, yeah, you always hear about the NEED for things on an already busy day and these things are needed that day. Fun stuff. Mission accomplished though and the concert was great!


So, breakfast for dinner it was. The boys love hash browns and while I normally make them from scratch, I cheated and bought the frozen hash brown potatoes. These were so easy to cook and crisped up perfectly. Garlic powder, onion powder, salt and pepper make these babies perfectly seasoned! Next time I have more time, I am making these though!


This actually came together pretty quickly...thank goodness and since it was something everyone liked, it was eaten with no complaints. Oh and for those of you out there that like "over easy" eggs, but don't like having to flip them, just put a lid on the frying pan while you cook the egg on medium heat. It works, trust me. No flipping necessary. I cooked 6 eggs on the fly last night, so I needed to make it easy!


You know the rule here...they get bacon, so I get waffles or pancakes. Since I am loving nutritional yeast waffles lately...I opted for that so all I had to do was pour it in the waffle iron and walk away. 


I'm so looking forward to this weekend. I am meeting up with blog friends tomorrow, we have an outing to the Natural Foods Warehouse (I love that place) and a lunch with some friends today! Not to mention movie night with my boys tonight (Back To The Future!)!

    I am only a dill girl too. No interest in the sweet or bread and butter pickles... yuck! This sounds SO good. My kind of dinner!

    Brinner looks great!

    I buy clothes for my nephew (he never brings any when he visits!)...and then he immediate outgrows them and I give them to my other nephew who is a year younger. That helps take the edge off a little!

    My hubby loves hashbrowns too. He makes a nice big mess on the weekends making them for himself ;-) Kroger carries a hot pickle that is SO good - not the jalapeno, the hot. Hope today is more relaxed for you!

    Natural Foods Warehouse sounds like fun to me!

    I love easy dinners like this -- eggs, hashbrowns and waffles sound delicious right now!

    My sister, her husband (and new bulldog puppy!) are coming to visit from TX -- they are both teachers and next week is their Spring Break. I can't wait to spend time with them!

    I literally can't go to target without spending at least $50. Even if I just go in there to get toilet paper, I swear things just jump into my basket! They have EVERYTHING!

    Yay for breakfast for dinner! : ) If I don't want to flip and egg, I put a splash of water in the pan and cover it for a few seconds. Works like a charm! : )

    Phew! It does sound like a crazy day, Sarena! I'm the same way with Target, hehe. So glad that you have fun stuff to look forward to this weekend! I'm meeting up with some blogger ladies for dinner tomorrow night and going to the Celtics basketball game on Sunday! :)

    Yum! I love well done, crispy hashbrowns like that! For some crazy reason, I've never made them at home, and I totally should! I know it's so simple :)

    Love your breakfast for dinner! I just recently started cooking my eggs that way. I love that they stay nice and pretty instead of getting speckly (is that even a word) when you have to flip them over. I totally bookmarked that lentil/sweet p hashbrown recipe. It sounds great!

    This weekend is just full of packing, packing, and more packing! Taking a break right now and REALLY don't want to get back to it, but I just have to focus on how nice it will be to be in the new house in 2 weeks!

    Have fun with your bloggy friends and shopping! The Natural Food Warehouse sounds like a place I could get lost in for hours! ;)
