Cheap Eats!


I would say that we ate beans because we are eating cheap due to the car repairs last week...


but we all LOVE black-eyed peas and cornbread mini muffins (I used this recipe minus the hot dogs)!


I smother mine in hot sauce served over slightly sauteed cabbage (the boys have it over rice/cabbage)...perfection! Don't be afraid of dried beans. They are so inexpensive and so easy to cook. I pressure cook mine, but on the stove works too. Cheap, easy and delicious...how can you beat that?!

What's your favorite cheap eat?

  1. Black beans or eggs are my favorite way to cheapen up a meal. Plus they're easy and fast. What more could you ask for?

  5. I need to try dried beans-- I always do canned because I just can't seem to pull it together to make the beans from scratch!

  7. Beans and rice are my very favorite food, sometimes with sausage, sometimes just the beans and rice. We love soups too, make a big pot and freeze and you have 8 already made meals in your freezer. i do one with collards and sausage and another with beef and beans. None of which my little patient can eat ( guess we will be having to come up with another menu when he finally gets hungry)

    Just reading your cornbread recipe and saw you guys visited tahlula falls. We used to have a home in Clayton and i grew up spending a lot of time in N GA. What a special place!

  8. I've been trying to cut back on my grocery bill as well. So far I have saved a decent amount by using coupons for the first time (have you seen that extreme couponing show? It is crazy!!) Any more advice you have on saving on grocery supplies the better!

  13. we had black-eyed peas the other night... oh so good! I'd say beans and rice are one of my favorite eats that are cheap... it's definitely a nice price tag, but we eat them because we like them!! add some green chiles, jalapenos and some corn tortillas, you've got one of our favorite EASY and FAST dinners! Jason warms the tortillas in a skillet, I cook the beans + chiles in another, we eat standing next to each other in the kitchen, as we make them :)

  16. i just made a cheap-eat salad today and loved every bit of it! mmm and black eyed peas are so yummy! i usually make curried black eyed peas- so good! <3

  19. I love beans so much that I don't even think of them as "cheap eats"anymore - even though they definitely are! i have never made them from dried before, though - i ought to, though.
    i can't think of anything else right now! wait; oats!

  20. Black-eyed peas I must admit are not one of my favs haha sorry. I do like using dry beans because of the same reasons!
