Frozen Coconut Cream

Somehow, yesterday wasn't as bad as I thought it would be. We all got moving and got quite a bit accomplished. I started working on cleaning out some clutter that we have. We don't have a ton of clutter, but we have coats that the kids have outgrown, along with clothes that don't fit them anymore. They also have tons of toys and games that they are too old for. I have a car full of things to donate now. I'm getting to the point too, where I'm ready to paint the boys' rooms. We have the builder's flat paint on the wall (they refused to use anything other than that) and after 6 years of being here, it needs to be painted, badly. I hate the process of painting, but I love how things pop and look so clean afterwards. We also need to paint the entire downstairs, but due to the vaulted ceilings, I am seriously not looking forward to that. I guess spring is just giving me a little extra energy to push me to do some home stuff. I'm gonna go with it since I have the urge and just do it.

We had the horrible storms again last night. The thunder and lightening felt and sounded like it was in the room. Either it didn't stick around too long or I was just too tired to care because it did not keep me up for long. I was exhausted. I could hardly keep my eyes open while we watched the Pixar documentary on Netflix last night and it was extremely interesting. It was done really well too, so I highly recommend it if you're a documentary junky like we are.

This morning was a kickboxing day for me with some weights and pilates. It felt great! I love my kickboxing. I have really moved into doing more and more of it lately. I can really tell a difference in the muscle tone of my arms and shoulders since I've bumped up the boxing. I have such broad pointy shoulders, that I like having a little round muscle over them to make it look less awkward (I hope). All this to say, if your looking for something different to do, try some kickboxing...it's great for getting out some aggression, getting in some cardio and getting some muscle toning...could you ask for more?


Now, treats! I made this last week when I had the coconut milk for the coconut cream pies. Max and I were seriously sad to see it go. I would not call this ice cream, but it was more of a frozen coconut cream. I basically made a pudding and then froze it in the ice cream freezer. I know that's essentially what ice cream is, but this was a completely different consistency. Once it started to defrost, it was a thick pudding in your bowl. I served it with toasted coconut on top to add to the coconut goodness!


Frozen Coconut Cream

3 cups coconut milk (I used So Delicious)
2/3 cup sugar
pinch of salt
5 TBSP cornstarch
21 drops vanilla stevia

Place 2 3/4 cups coconut milk in a sauce pan with the sugar and salt. Bring the mixture to a simmer. Combine the remaining 1/4 cup of milk with the cornstarch and mix well. When the milk mixture has come to a simmer, slowly pour the cornstarch mixture in while stirring quickly so it doesn't form lumps. Continue to stir until the mixture comes to a boil and thickens. It will coat the back of the spoon. Remove from heat and stir in the stevia. Allow to cool for a 5 to 10 minutes stirring occasionally. Next, put plastic wrap on top of the pudding and place it in the refrigerator to cool completely. Once cooled, you can freeze in your ice cream freezer.


***Although I did not do this, I think you could freeze this in individual servings without an ice cream freezer.

  1. I love kickboxing/boxing too for the upper body work and aggression release ;-) Glad the storms rolled through quickly (or that you slept through them at least).

    I really need to get on top of some de-cluttering. I feel like it's out of control lately.

  2. I was just talking yesterday about using the heavy bag we have in the garage... I've never taken a class, but I love boxing!

    I did a BIT of de-cluttering yesterday, and have big plans for more today... I love that feeling too...

    that coconut cream looks simply delicious!

  10. This sounds fantastic! Now I really want to make coconut ice cream (imagine all the flavour combinations!) so I have to do is wait for the weather to get warm enough to warrant eating ice cream! :)

  12. I used to love kickboxing! It is definitely a fun way to get a workout in :]
    I'm with oyu on painting. In my head, I always expect it to be really fun - sort of "Oh! I love to paint!"- but once I'm even a little bit into it I just want to be done. It is a lot of work! The end result is so worth it, though.
    The coconut cream looks awesome!! Especially with the toasted coconut on top - YUM!

    Yes, you can and I do it. It's not perfect b/c the ice cream maker just adds that extra specialness but it's totally do-able and works just fine :)

  19. I've never tried kick boxing before...for some reason the thought of it reminds me of the Taebo I was forced to do in high school gym class! Ugh...HATE Billy Blanks! ;)

    I swear there is a 5-6 year lifespan for that flat contractor paint. That's about how long I was in my last house and I had to do so many touch ups before selling it was crazy! And I totally feel you on the vaulted ceilings. That's what I had before and what I have now. LOVE the way they make the room feel so big...HATE the thought of having to get up on a huge ladder to paint! I don't have a fear of heights...I just know how accident prone I am! ;)

    The description of your frozen coconut treat reminds me of the paleta that I had last weekend. Totally different consistency from a regular popsicle...creamy yet the texture of the coconut stood out too!
