We had the horrible storms again last night. The thunder and lightening felt and sounded like it was in the room. Either it didn't stick around too long or I was just too tired to care because it did not keep me up for long. I was exhausted. I could hardly keep my eyes open while we watched the Pixar documentary on Netflix last night and it was extremely interesting. It was done really well too, so I highly recommend it if you're a documentary junky like we are.
This morning was a kickboxing day for me with some weights and pilates. It felt great! I love my kickboxing. I have really moved into doing more and more of it lately. I can really tell a difference in the muscle tone of my arms and shoulders since I've bumped up the boxing. I have such broad pointy shoulders, that I like having a little round muscle over them to make it look less awkward (I hope). All this to say, if your looking for something different to do, try some kickboxing...it's great for getting out some aggression, getting in some cardio and getting some muscle toning...could you ask for more?
3 cups coconut milk (I used So Delicious)
2/3 cup sugar
pinch of salt
5 TBSP cornstarch
21 drops vanilla stevia
Place 2 3/4 cups coconut milk in a sauce pan with the sugar and salt. Bring the mixture to a simmer. Combine the remaining 1/4 cup of milk with the cornstarch and mix well. When the milk mixture has come to a simmer, slowly pour the cornstarch mixture in while stirring quickly so it doesn't form lumps. Continue to stir until the mixture comes to a boil and thickens. It will coat the back of the spoon. Remove from heat and stir in the stevia. Allow to cool for a 5 to 10 minutes stirring occasionally. Next, put plastic wrap on top of the pudding and place it in the refrigerator to cool completely. Once cooled, you can freeze in your ice cream freezer.
I'm sharing this on Simply Sugar and Gluten Free's Slightly Indulgent Tuesday Round Up.
I love kickboxing/boxing too for the upper body work and aggression release ;-) Glad the storms rolled through quickly (or that you slept through them at least).
ReplyDeleteI really need to get on top of some de-cluttering. I feel like it's out of control lately.
I was just talking yesterday about using the heavy bag we have in the garage... I've never taken a class, but I love boxing!
ReplyDeleteI did a BIT of de-cluttering yesterday, and have big plans for more today... I love that feeling too...
that coconut cream looks simply delicious!
We also have had the urge to do some home projects -- we're going with it until the feelings pass!
ReplyDeleteOh my gosh!!! YUM!!! Do you think it would work to make this with stevia instead of sugar? Maybe I'll try a small serving of it and see...
ReplyDeleteI love kickboxing too! Such a great workout, and so much fun that it doesn't even seem like a workout!
ReplyDeleteI understand exactly what you mean about getting things done. I'm not someone who loves to clean, so when the inspiration strikes, I just need to GO WITH IT!
ReplyDeleteYour coconut cream looks so yummy!
I didn't even notice the storms or wake-up from them. I was beat apparently.
ReplyDeleteAnd glad you had a great day and got some stuff done. I love when I find motivation for things like that.
I'm glad that you guys transitioned back from vacation smoothly!!
ReplyDeleteI'm a huge fan of kickboxing - it makes you feel so strong. :)
Another delicious recipe. I've been all about coconut lately. Yum.
I used to do kickboxing all the time. I love the ab definition it gives. Happy Tuesday!
ReplyDeleteThis sounds fantastic! Now I really want to make coconut ice cream (imagine all the flavour combinations!) so I have to do is wait for the weather to get warm enough to warrant eating ice cream! :)
ReplyDeleteI love coconut ice cream! I've made a few ice creams with coconut milk, so I know what you mean by the consistency. But this looks really good!
ReplyDeleteI used to love kickboxing! It is definitely a fun way to get a workout in :]
ReplyDeleteI'm with oyu on painting. In my head, I always expect it to be really fun - sort of "Oh! I love to paint!"- but once I'm even a little bit into it I just want to be done. It is a lot of work! The end result is so worth it, though.
The coconut cream looks awesome!! Especially with the toasted coconut on top - YUM!
Yum! I need to make some of this! I just bought some coconut cream popsicles, but this sounds much better.
ReplyDelete"Although I did not do this, I think you could freeze this in individual servings without an ice cream freezer."
ReplyDeleteYes, you can and I do it. It's not perfect b/c the ice cream maker just adds that extra specialness but it's totally do-able and works just fine :)
oh what a fun dessert idea!
ReplyDeleteI really want an ice cream maker so i can make my own ice cream and store it. THis looks incredible!
ReplyDeleteI love cleaning and decluttering...it makes life so much better :)
do you do a dvd for kickboxing?? that is something I have always wanted to do!! Glad to hear you love it.
ReplyDeleteAnd love me some coconut ice cream!
Good luck with all the house stuff...painting can be fun and tiring too ;)
I saw the link you posted on the twins' site about your kickboxing! Thanks for sharing. I want to be super fit and strong like you and plan to be a biter asap. Ha! :-)
ReplyDeleteThanks for the lovely frozen coconut cream recipe. You continue to top yourself!
I'm excited about this recipe!
ReplyDeleteI was looking for a non dairy 'ice cream' recipe because I'm also lactose intolerant.
Thanks for the idea!
I've never tried kick boxing before...for some reason the thought of it reminds me of the Taebo I was forced to do in high school gym class! Ugh...HATE Billy Blanks! ;)
ReplyDeleteI swear there is a 5-6 year lifespan for that flat contractor paint. That's about how long I was in my last house and I had to do so many touch ups before selling it was crazy! And I totally feel you on the vaulted ceilings. That's what I had before and what I have now. LOVE the way they make the room feel so big...HATE the thought of having to get up on a huge ladder to paint! I don't have a fear of heights...I just know how accident prone I am! ;)
The description of your frozen coconut treat reminds me of the paleta that I had last weekend. Totally different consistency from a regular popsicle...creamy yet the texture of the coconut stood out too!
An excuse to make 'healthier' ice cream? yes please. I like the combination with stevia..makes it seem a bit lower calorie
