Apparently the theme this week at our house is snacks and pies. I can NOT complain about that...
This is a chickpea flax oat flatbread (say that 10 times fast) pizza with garlicky hummus spread on the crust, fresh spinach thrown on top, peppers and onions (defrosted...we are still eating seasonally), sliced artichoke hearts (from the remainder of the can I opened the other day), kosher salt, fresh ground pepper, Italian seasonings and then drizzled with a mixture of tomato sauce and nutritional yeast.
Heaven!

ReplyDeleteI love socca pizza -- and loading it up with veggies. You can't get pizza this good in a restaurant -- and it's much more fun to make at home. What a lovely meal!
