Seriously, this has everything for your senses! The smell is undeniably sweet, summery and bright! The texture is gooey, cakey and crunchy.
You know the best thing that goes with all of that...you know, to make it even better...
frozen dairy free soft serve ice cream (I added vanilla bean to it this time, unbelievable fresh flavor)!
Seriously, how can you not be happy after that. Now, I'm not saying to drown your sorrows in dessert, I'm saying I drowned mine in this tasty piece of peachy goodness!
Dairy Free/Gluten Free Peach Cobbler
2 cups white rice flour
2 cups almond milk
2/3 cup sugar
30 drops NuNaturals vanilla stevia (or an extra TBSP of sugar + some vanilla)
2 TBSP baking powder
pinch of salt
2 15 oz. can peaches halves with the light juice
Preheat the oven to 350 degrees. for 40-45 minutes
Soak the white rice flour with the almond milk. (I did 4 ½ hours but I would imagine you could do this as long or as you like). Next add the sugar, stevia, baking powder and salt. Pour the batter into a 13x9 pan that has been sprayed with cooking spray. Slice peaches to the size you like. Add the peaches and the juice to the top of the batter. Swirl the juices in just a little bit. Bake for 40 to 45 minutes. Serve warm with a scoop of your favorite frozen vanilla treat.

Hmm, my funkalicious mood could use a peachy bowl of goodness too! I blame the weather mostly...I hate to say that my mood is so reflected by mother nature, but can we get some sunshine around here for more than a day or two?

Kiss My Broccoli...I haven't used the brown rice flour for this, but I think it would work and be delicious! I have really started loving brown rice flour in so many things. The flavor is just incredible. I would suggest soaking the flour though. It really helps it loosen up a bit more.
