Wacky Weekend! |
It feels like forever since I last wrote. I was planning to post yesterday, but my sister-in-law thought she broke her hand when she fell on a boat Monday and I needed to help her with the kids while she went to the doctor. Luckily it was not broken! So, I am a day late. I hope everyone had a relaxing fun weekend. The illustrator had to work, but he did take a little time to go out with the boys and I to the lake. We all got our fair share of vitamin D!
We ate your typical food for the holiday weekend. I actually made most of what I intended to make, but only had the light or time to take some pictures.
To go with our burgers, I roasted potatoes with garlic powder, onion powder, salt and pepper. Baked at 400 degrees for 45 minutes on the Better Homes and Gardens baking sheet...they were perfect!
I love the pan. I used it to make lentil burgers...
and bake cookies...
I pulled out my copy of Vegan Cookies Invade Your Cookie Jar for a quick chocolate chip cookie recipe, per Max's request...
I loved this recipe and the book is great! It's very easy to follow and read. I love that the recipes use ingredients that you have on hand all the time! The chocolate chip cookies are like soft batch cookies...YUM!
I had an amazingly fresh fruit salad! I am in need of so much fruit after being in the sun...
Most interesting find of the weekend...
Max found a fish in his pants after diving in the lake...
It was a dead fish. This was completely weird and bizarre...
We spent time hanging out on the deck...
I've been working a lot on recipes lately. I will eventually get my book done...eventually. I love working on it, but finding the time to focus is hard. I guess it's summer time, so I should just let it go. I will get focused when school starts back up for the boys. For now, I'm working on recipes and will eventually get them all organized!
I have a crazy day ahead of me today. I'm running around getting errands done and hopefully I will get back in the kitchen.

Glad no hands were broken this weekend! That would put a damper on things for sure...I guess the process of finding out was probably a little bit of a downer in itself! The food all looks amazing. As usual :)

Those cookies really do look good. You can't go wrong with a delicious, fresh-baked chocolate chip cookie :)

I've never found a fish in his pants, but Jason found a snake in his underwear once. (That sounds bad!) He had this pile of dirty clothes on the couch and he went to pick them up and there was a baby snake in the pile. Yes, in my house. i'm still a little bit traumatized from this event.

i would be pretty freaked if i found a dead fish in my pants, i'm not gonna lie! haha. such yummy eats for the holiday. i've been obsessed with "normal," white/red potatoes lately, on the grill! i'm glad you were all able to get some family time in :) and i hear you on the book - it is summer, so enjoy it! i know i keep pushing it, but believe me - i can so relate to just getting caught up in summer ;)

Oh my gosh, I had to laugh at the fish in the pants thing. I can imagine that happening to my brother and him and I laughing about it for YEARS. We are not ones to let a joke die.
