What I Ate Wednesday...
Before I get going, I have to say today has already started off with a bang! I got up at 5am to get my 8th grader to school. Seriously, I have an 8th grader! How did that happen? Anyway, I am so excited for him. This is a big year for him in a new school, but I know he will do great.

Peas and Crayons

Now, due to lack of internet, I did not make it to the party last week, but this week...I absolutely wanted to attend!

 Sometimes, starting the day with a simple bowl of oatmeal with almond milk and diced apples is the only way to go. 

 Lunch was a massive pinto bean burrito! I pressure cooked the beans...

 loaded the whole thing with banana peppers (I love that they look like flowers when you slice them), lettuce, tomato and tons of hot sauce!

Snacks was a huge bowl of cantaloup fresh from my father-in-law's garden!
Perfectly refreshing summer treat!

Dinner was another socca pizza loaded with veggies! Yeah, it looks just like Saturday's and was just as amazing!

 I loved every last bite!

 My night time treat was a frosty Kahlua and Silk Pure Almond Milk (unsweetened)!

All mixed up, this baby tastes like a grown up milk shake! Perfect ending to the day!

Do you remember 8th grade? I actually do. I remember it was the year they split another middle school off of ours and one of my best friends ended up going to the other school. It's kind of odd, but I remember a specific smell from that time too. I know it had to have been something in bloom in Georgia because I can still smell it there. It's so strange how and when you remember things. I hope these are good memories for Jay!

Oh and today is the last day to vote on the cookies! Thank you to all that took the time to vote!

    haha I've been up since 5am as well. My boyfriend wakes up around 4:30 to get ready for army PT and eventually although he tries to be "quiet" it wakes me up.

    Your kahlua drinks sounds so good! How did you make it?

    There are various things I remember from 8th grade/jr high. It was fun but dramatic. I think it's a girl thing- we knew how to make a big deal out of anything... .oh geez...

    Gosh, I do remember 8th grade. I remember trying so hard to fit in! I wish I knew then that all I had to do was be myself......

    Burritos and pizza on the same day??? Love it! I do remember 8th grade. It was the year I passed out in English (blood sugar bottomed out) and I also tried out for 9th grade cheerleading squad in the spring (made it).

    Yum! Everything looks so simple and delicious (my favorite!). I think I have to pick up some Kahlua. Sounds like my kind of dessert. :)

    Ah - yes I remember 8th grade! I went to K-8 school (and then 9-12 for high school) and 8th grade was a big deal! Plus I had my first "boyfriend" in 8th grade -- granted it only lasted 2 weeks, but he did say "I love you". That is so strange to think about now!

    Great eats! I wonder what that smell is. Being a GA girl, I'm intriguied. haha Whenever I smell that orange liquid cheap soap, it takes me back to kindergarten.

    Dang, every time I see your socca pizza, I re-bookmark it haha. I'm pretty sure I have about 10 bookmarks now :)

    Quick question: what exactly does the "socca" part taste like? I'm trying to imagine it but am not quite sure.

    A Spoon Full Of Sunshine, I would say socca is more like a cracker crust depending on how thick you make it. I like to bake it crisp. It has a very neutral flavor which is why I add garlic powder to it. My youngest says that it's "crumbly" kind of like cornbread. It is so good. I love chickpeas and I think the flavor is spot on for pizza!

    ahhhh 8th grade!? that's epic! I remember 6th and 9th a little more than 8th for some reason... but it was a ver akward time for me regardless! haha =) so glad that's over and done with!!! Happy WIAW!!!

    Oh my word...8th grade already?! I definitely remember 8th grade...it was a weird year! Finally the "big kids," right before being demoted to a freshman and being the baby again! haha.

    I just came across your blog from weekly bites. Great blog and your oatmeal looks great. I love oatmeal in the morning! I am looking forward to following your blog. I have been considering taking my youngest off all dairy because he tends to hold a lot of congestion in his lungs.
