I Almost Forgot...Thanksgiving!

I told Heather a few weeks ago that I feel like blogging is like having a cup of coffee and chatting it up with an old friend. I feel like I have no time for coffee with my friends right now! I don't feel like I need to explain that "life happens" when I can't post. I think you all get that. I'm pretty sure you all aren't sitting by the computer waiting to see what I have say for the day. I know I'm exciting and all, but I know I'm not that exciting. When it happens...it happens. I'm really focused on studying and I really want to reach my goal to complete my certification by the first of the year. Tony has almost convinced me to get my Personal Training Certification after that...almost. I'm loving the nutrition information and I've started working on my own fuel sources already. Unfortunately, they have been on the rushed side and not so pretty, but really tasty. Once I get things a little more settled, I will share more. My time in the kitchen has been limited, but I have been in there. 

Proof that I've been in the kitchen...I developed a recipe for gluten and dairy free French style rolls! That completely made my week! These will be on my list to make for Thanksgiving...



Also, did you guys know Thanksgiving is in 1 week??? I lost track of time completely! Seriously, I did not even think about it until we were invited to others' places for the holiday! Oops. I told you, I'm completely out of it! 

I am cooking a few things for the holiday. I have been holding out on making these things until the special day so I can enjoy them even more! These are the only things I care to eat during Thanksgiving...

  2. I really can't believe how Thanksgiving has just come on us so quickly. How'd that happen??? And you know, I actually do look forward to your posts b/c I look forward to catching up. BUT, life happens and living your life trumps blogging. You already know how happy I am for you and your new endeavors. Very inspiring. Truly makes me happy for you.

  6. okay, well, I can say that I DO miss your posts. not trying to pressure you, I know life is very busy, but I just wanted to say so.

    I get to keep up with you in other ways though, so I'm okay ;)

    and I love the cup of coffee analogy - it is SO true!

    I want those rolls... they look awesome! for the first time EVER, I am going OUT to Thanksgiving dinner! I cannot wait, we are going to one of the awesome vegan restaurants in Portland. so... no sweat for me - no cooking, just relaxing!

  9. I can't believe Thanksgiving is so soon! Those cornbread muffins look absolutely wonderful. Those are always a staple on my thanksgiving table, as are sweet potatoes and brussels sprouts, and a few pies for good measure!

  10. Those look delicious! Very timely too - my sister is coming home for the holidays and she is now gluten free and vegan. I bet these can be made to satisfy her needs. :) Have a great one!!

  11. These all look so delicious! I love crustless pumpkin pie and am thinking of doing a sage and onion biscuit this year...I'm hosting, but it's getting complicated because my inlaws and parents want to bring dishes that are gluten-laden...but at least I'll be able to eat whatever I make!

  12. I'm very lucky this year because my mom is having Thanksgiving dinner this Sunday for us since we always go to my husband's family's for Thanksgiving. So I get 2 Thanskgiving dinners in one week! Plus, my mom makes the BEST lemon merengue pie. It's my most favorite thing in the world!

  16. Def like the idea of the crustless pie... I've been searching for a gluten free crust and they are hard to find... the make-your-owns sound so complicated. Thanks for the recipes!

  18. I'm in charge of the easiest corn dish ever. :) Last year it was store bought rolls. I'm such a nice guest. ha! :) I want to come to YOUR Thanksgiving! :) Is it okay to invite myself?
