Black Beans, Millet and Variations On A Theme...

I will eventually get into some details of my studies and do a review of the course I'm taking but for now you get some quickie tips on eating well in a hurry since that seems to be all I do now.

I'm constantly throwing odds and ends in a tupperware, shaking it up and throwing it in a cooler bag for later. After many bummer meals in the beginning of studying and work, I realized that the easiest thing for me to do for quick, healthy complete meals is to cook a few good protein choices along with a couple of complimenting grains (I am all over this subject these days - food combining has become a bit of an obsession for me, more on that later) and to have some fresh herbs and vegetables to throw in the mix for variety! My shot of apple cider vinegar is my acid of choice to brighten the flavors and dinner is served!

This saves so much time and frustration when there is nothing to eat around the house. Being able to pick and choose my added flavors is like going to a salad bar with all my favorite foods! Who doesn't love that?

What's your favorite salad mix? I need ideas!

  1. That sounds like my process behind making soup- thrown in whatever is around until the pot is full... :p

    Hmmm... I've been on a Greek salad mix recently. Mostly because I seem to have an abundance of black olives and feta.

  3. my favorite salad things are a avocado or tahini, sweet potatoes, and a mix of other veggies. sometimes a sprinkle of hemp or sesame seeds. and raw crackers that we make in the bakery are wonderful on salads.

    mmm craving a salad now :)

  4. Hello! I have just (re-)discovered your blog and I really enjoyed catching up on a few of your recent posts. I am also a non-dairy person, and I have recently started my own blog after years of reading other people's blogs. I am about to start a new job so I definitely need some new healthy, portable meal options. My favorite at the moment is the wheat berry and bean salad from Oh She Glows. I highly recommend trying it if you haven't yet. :-)

  6. Jason is always picking up random containers in the fridge... what IS this?? :)

    I always have cooked quinoa, avocado, a bean (black, pinto or chickpea usually), spinach. other veggies always get in there too, whatever I have (peppers, carrots...) and lately I've been using hot sauce or this tahini dressing thing I made. Mmm.

  7. Haha - I love random food tupperware! I like to throw whatever leftovers we have from dinner in one container and then take it to work for lunch the next. I've yet to eat one that disappoints! :)

  9. Oh, that is SUCH a good idea! I love mixing it up and just throwing things together! Then at least you know you have a nutritional meal to fuel your brain while you are studying and do not end up eating the things that are not so good for you. I throw all of my leftover veggies and such into salads the next day for my lunches!!

  11. Nice allergen free recipe! Millet is very corn-y and would def go great with the black beanies. I also love on the vinegars. There's really no need for oil, which cuts a nice amount of calories from any meal! <3 Nice one! :-)
