My brain is officially closing out for the weekend! I have a hair appointment at 9:30 and a new me will emerge. I'm not nervous about getting my hair cut, but I'm a little nervous about going so short. I'm doing it though. I've always wanted to try super short and now is my chance! So, I'm going to leave you all with a little sunshine from yesterday. The chia jam addiction continues...
I wanted figs, but I could not get my hands on any so this was created...
Strawberry Clementine Ginger Chia Jam
(makes 2 cups)
5 oz Clementines or 2 whole, peeled and sections cut in half
8 oz strawberries chopped
3/4 cup water
1/4 - 1/2 tsp fresh grated ginger
1 TBSP chia seeds
3 oz strawberries diced
10 drops vanilla stevia (I used NuNaturals) or 1 TBSP sweetener
In a sauce pan, combine the clementines, strawberries, water and ginger. Cook on a medium high temperature for 10 minutes or until the fruit is softened and cooked. Remove the mixture from the heat, add the chia, chopped fresh strawberries and sweetener. Stir and allow to cool. Then refrigerate and serve when chilled.
