Squ-hash Browns With Savory Waffles!
Happy Monday morning friends! This is definitely going to be a Marvelous Monday!

MiMM MIMM #67 Just a Chill Kind of Weekend!

I have a busy one planned for today. I've already started the day with a 5am training session. I have another training session in an hour, a class to teach shortly after that, a couple of training sessions this evening and a nutrition client after that. I'm really loving my work these days. I'm busier than I've been in a long time and it feels so good! There is something so incredibly inspiring working with people that want to make a difference in their lives, seeing them reach for those goals and achieve them! I also feel like I'm contributing more financially. I haven't quite reached my goal yet in that department, but things are growing and that feels good. Knowing this is the beginning and looking forward to the future really helps my mental outlook on things. For the longest time, I felt like I was just kind of wasting time on a dream, but things are really coming together and that makes me happy. Everyday is a new adventure.

I'm pretty sure most of my readers that have been around for awhile now are realizing that the recipes are little lacking these days. Life has been busy, so I've started working with quick recipes. Now that things have settled down a bit, I'm gonna share more often. Life is fast and we all need good wholesome recipes for our on the go lives! I promise to be better about this.

Speaking of quick, today is my day to share the recipe I made of someone else's from Better With Veggies' MMAZ! I know, again with the kabocha. I will never get tired of this squash. So, my friend Spabettie made this incredibly easy and delicious recipe for Squ-hash Browns


YUM! It's like she was speaking to my soul when she created this one. Kabocha, onions and rosemary (my all time favorite herb)! This recipe is so good and I love how beautifully the rosemary compliments the slight sweetness of the kabocha and caramelized onion. I think this little dish may be a new addiction to my Thanksgiving menu. Perfect fall flavors!


I did get a little crazy with it and put it on my chickpea waffles topped with spicy mustard and a drizzle of local honey...YUM! Seriously, you guys have got to try this!


Savory Waffles

2/3 cup chickpea flour
1 1/2 tsp baking powder
1 TBSP apple cider vinegar
pinch of salt
1/2 cup egg whites
1/4 cup carbonated water

Mix your dry ingredients together. Add your wet ingredients and mix well. Cook according to your machine's directions.

Roasted Kabocha Custard
Good Monday morning (um, it's afternoon now, where has today gone?)! I hope everyone had an amazing weekend that will lead into a Marvelous Monday! I worked on Saturday, then on Sunday I enjoyed an incredible walk in cool fall temperatures and got some cleaning done around the house. I am hoping this sets us up for a great week here.

Now, on to one of my favorite subjects! KABOCHA!!! If you follow me on Instagram, then you are fully aware of my kabocha addiction. It's really hard to hide.

A little history to the good stuff. Kabocha is an Asian squash with a hard outer skin (that is edible, YUM!) and a super dense, thick and delicious (that parts a fact) slightly sweet interior. I've read that it's a cross between a sweet potato and pumpkin. I would tend to agree with that. I love that it's lower in carbohydrates too and super high in fiber. Did I mention it's delicious?

Anyway, my addiction...

I tend to buy it in bulk...

Roasted half with yogurt and peanut butter chocolate "fudge"...

 Peanut flour chia "fudge" over coconut roasted kabocha...
My "strange but good" creation of a salad with roasted kabocha and sriracha peanut butter dressing...

Roasted kabocha over waffles with cinnamon and coconut oil...

Roasted kabocha with peanut flour sauce and coconut chocolate sauce (this one is heaven in a bowl)...

It makes perfect on the go snacks...

Do you see a trend here? Yeah, I roast it all the time and just top it with something or eat it plain. So when Heather at Better With Veggies chose my favorite squash ever...I knew I had to step it up and actually do something with my beloved kabocha. 


Truth be told...this recipe is actually my husband Tony's brain child. When we started playing around with his diet to include cleaner low fat proteins and better for you carbs, he started getting all creative in the kitchen. He has been telling me to try this with kabocha forever and I finally decided it was time to step away from the pan of roasted kabocha and make this recipe!


Trust me when I say, you want to make this! It's so easy, no added sugar, high protein, creamy, slightly sweet and delicious! I added a little stevia to it to enhance the sweetness of the squash, but I really didn't want it super sweet. Tony adds brown sugar to his for a sweeter treat more like pumpkin pie. He also put some marshmallow on his for even more of a treat. I honestly think you could make this as a dessert or a side dish. 

Roasted Kabocha Custard
serves 3

303 grams or about 2 cups roasted kabocha
1 cup egg whites or 4 eggs
1/2 cup almond milk
1/4 tsp cinnamon
fresh grated nutmeg
pinch of cardamom

Preheat the oven to 350 degrees. Spray 3 ramekins with cooking spray.

Put everything in a blender or food processor and blend until smooth and thick. Pour into ramekins and bake for 25-30 minutes. Serve warm or cold!

This week has been beyond exhausting and it's a long one for me. I feel like I say this all the time, but the past couple of weeks have really been that way for me. You see, I started teaching small group fitness classes at the local community center here. I'm used to teaching small groups, but this was a new schedule on top of my personal training clients that all seemed to want to meet at different times than usual. Good times people. I'm actually pretty flexible other than needing to drop the kids off at school and pick them up. Other than that, I'm good with changes. Keeps us young, right? That's what I tell myself anyway...

So, in the midst of the craziness, my friend Lindsay brought something to my attention...#slowdownchallenge13. If you follow me on instagram, you've likely seen the hashtag. Jeff Goins has started The Slow Down Challenge for us all to stop, take a look around and really appreciate what is in front of us. After the craziness that has been this year, I really needed this. Life has been less than my idea of perfect in many areas and that tends to bring me down. Sure I have good times and good things going on, but you know, it's just not been my idea of great. I feel like we are constantly go go going and even in the quiet times, my brain is somewhere else. I don't want that anymore. I want the slow. I want to appreciate the moments here in front of me. I want to put everything down and really focus on my kids, my husband, my friends and my career. This is my new focus in life.

I'm sorry that I'm not around blogging as much as I used to be. I hope to blog more once things settle down for me and I get into a groove again. I'm always on Instagram though. It's easier for me to pick up, post a quick pic and chat with everyone more one on one.
